Level:  Three

Entry Requirement:  Level 2 Hospitality with 10 credits.  HOD approval can be sought if the course has been studied, but 10 credits have not been achieved.

Course Outline:  This course follows on from Level 2 Hospitality with more emphasis on practical food preparation skills.  Students continue to work towards hospitality industry unit standards, but also combine University Entrance Achievement Standards when appropriate.  The work includes hygiene, safety and food preparation to catering standards.  Students are expected to participate in contract catering work when opportunities arise.  This work is often out of school hours but provides an excellent insight into the industry and an opportunity to enhance learning.  Students are also strongly encouraged to gain weekend or holiday employment in the industry to gain further experience.

Costs:  $60.00 course fee.  
            $25.00 for catering apron and hat.
            Students are also required to have flat, black, closed leather shoes, black dress trousers or skirt, and formal 
            white shirt for all catering occasions.

Where does it lead?  This course provides a basis for tertiary or industry training in Hospitality, Health Sciences or Food Technology when combined with Level 3 NCEA Sciences and Mathematics.
